Ingredients for Dal Kachori

  • Maida (wheat flour) – 2.5 cups
  • Mung bean lentils – 1/2 cup
  • Gram flour – 1/4 cup
  • Ghee – 4 tablespoons
  • Cumin seeds – 1 teaspoon
  • Fennel seeds (saunf) – 1 teaspoon
  • Turmeric – 1/2 teaspoon
  • Coriander powder – 1 teaspoon
  • Garam masala – 1 teaspoon
  • Amchur (dry mango powder) – 1 teaspoon
  • Ginger powder – 1/4 teaspoon
  • Red chilli powder – 1 teaspoon
  • Green chillies – 2
  • Oil – for frying
  • Salt – to taste

Method for making Dal Kachori

  • To make this kachori, first put the flour in a large bowl.
  • Then add a little salt and ghee and mix well.
  • Now, add water little by little and knead into a soft dough.
  • Then, apply oil to the dough, cover it with a cloth and set it aside for half an hour.
  • Before this, soak the mung dal in a bowl for two hours.
  • Then grind the mung dal in a mixer to form a coarse paste and store it in a vessel.
  • Now, take a pan, add 1 teaspoon of ghee and heat it over medium heat.
  • Add fennel and cumin seeds, along with a pinch of asafoetida, and fry them.
  • Add turmeric, red chilli, coriander powder, dry mango powder, garam masala, and other spices, along with salt to taste.
  • After the spices are thoroughly fried, add gram flour and fry over low heat.
  • Add the pre-prepared mung dal paste to this mixture and mix.
  • After this, take the flour dough and form a ball.
  • Then roll this ball, press it with your thumb to deepen it, and add the prepared mung dal stuffing.
  • Enclose the stuffing and flatten it between your palms to form a ball.
  • Heat oil in a pan, then fry the kachoris over low heat.
  • Now you can take it out in a plate and serve it with some chutney.
